Other than a handful of dishes, whenever I get something vegan, the best they can do is usually "does not make me want to choke on the food".
I mean, it's getting better than it was a few years ago. But even with all the other reasons people switch, it still has a long way to go.

In fact, cholesterol production is so important that your liver and intestines make about 80% of the cholesterol you need to stay healthy. Only about 20% comes from the foods you eat.

So I'm not saying to listen to me over your doctor (I am not a doctor, and don't even play one on Forum Ice!) but from what I understand, only as much as 20% of your cholesterol comes from what you eat. I would assume that the vast majority of your improvements would therefore come from medications instead.
Obviously I know nothing about your personal medical history, but if it was me I would definitely seek out a 2nd opinion (or at least talk to your doc again) because the vegan diet leads to less than optimal health in a number of areas.

My family has a history of high blood pressure. I don't.
My father died at age 57 of a heart attack, and my mother has suffered 4 strokes.

exactly. we have two different veggie burger recipes we make regularly, one black bean based, the other sweet potato and white bean based. and if we were more inspired, there are many more veggie burger recipes that are more complex and elaborate. we just use the ones we do cause they're fairly easy to whip up a double recipes' worth of burgers.100%. Where vegan or vegetarian food goes most awry is when it tries to come up with shitty facsimiles of animal products that pretty much always end up being less healthy and far worse tasting than what they’re trying to imitate.
Just stick with the genuine article—beans, legumes, potatoes, rice, mushrooms, veggies, etc. Plenty of good meals you can whip up with those instead of an ultra-processed slurry trying very hard to look like a beef burger.
