OT: What are you Watching/Listening/Drinking?

What's New York Style pizza? I've had pizza in New York, just never nailed down the "style."

With a bit of debate around the edges it's largely:

- low hydration, cold fermented dough usually with a bit of evoo and sometimes sugar
- Hand stretched, thin but not like chicago tavern style thin
- Uncooked sauce that is basically just a can of tomatoes, blitzed and a thin layer spooned on and spread out
- Low moisture mozzarella

Basically it's simple pizza, big pies, crust has a bit of chew to it.
 
Thanks. Well, I 've had some darned good pizza in New York as well as Chicago. However, ain't none of 'em holdin' a candle to Deja Vu in SF. Not talkin' about SF pizza up against the lot - talkin' about Deja Vu up against the lot. Just one of those little local neighborhood joints you always look forward to coming home to after you've been away for awhile. Crust bites nicely without being thick, simple sauce, low moisture mozz, freshest toppings in the world, and they get their sausage from a local butcher. Up the street from my old hockey bar. Open late. 😊
