OT: The M-Fing Food Thread

They're the little purple pickles that every shawarma spot in the known universe has. They ferment their turnip with a piece of beet in the jar to give it the colour.
they are usually more pink than purple, blindzeye (likely from the beet juice)
 
Made a smoke salsa this past weekend. Need less cilantro next time but a good start.

Smoke roma tomatoes, white onions, jalapeños, garlic and scotch bonnets.

Add seasoning salt, cilantro, lime juice and reg salt.
I don't know that too much cilantro is a possibility. Just like too much garlic is not.

Neither. It's a boring topic with minimal differences between the oils from an overall health perspective. On average seed oils are a slightly healthier alternative in most regards but you're really splitting hairs.

The people who follow the data are generally perplexed by this new trend of obsessing over oil and getting it completely wrong.
 
It's mostly a reaction from the very online, very aggressive carnivore diet types. The literature is relatively clear that there's not a huge difference between the types of fat but that there are certain aspects that actually matter. Balance between omega 3&6, limiting exposure to some of knock on effects of bad/cheap processing of seed oils (aldehydes are a thing and they're not good for you). The impacts of overheating and then ingesting any kind of fat/oil, personal genetics/resistence to inflammation.

Some weirdos want an easy yes/no, good/bad though because nuance gives them headaches.

the required processing makes it an easy target. why eat processed when you don't have to.

but of course they conflate that with their narrative of feminizing estrogen laden veggies replacing manly testosterone giving meat.
 
The main culprit of seed oils that the manly maga carnivore types get fooled by, is that seed oils are often guilty by association. They're a cheap filler for basically all ultra processed junk food. That doesn't make the fats themselves unhealthy of course, but nuance is hard.

There's that, plus the closeted homo thing of maga carnivore types thinking it's feminine to not eat everything animal based. So they'll twist the narrative into whatever they want.
 
But yeah the intense focus that seed oils get should be on l something like consumption. Nothing has clearer evidence from an overall health perspective than overconsumption and obesity bad, balanced diet good. But that's boring and not something influencers and supplement sellers can make money on.

thanks. I will continue my current approach of basically using all the oils, depending on what is being made, and how.

think we currently have: EVOO, avocado oil, coconut oil, peanut oil, canola oil, sesame oil [butter, ghee]
 
Forgot to mention duck fat yeah...that's god tier stuff. I use the Kenji method for air frying roasted potatoes and the best I've ever gotten them is doing a duck fat toss with the potatoes before going into the air fryer. Don't have it on hand as much as chicken fat though, I save a fair bit of chicken fat from buying whole bird, roasting bones and scraps for stock, etc.
