As for gnocchi, I love it, but it's like compounding the carbs on an already pure carb dish. I don't indulge often.

On a related note, I came across this post on FB the other day - John Gotti's fave dish. Eggplant rollatini?? I honestly don't think I've had this before? I searched to see which restaurants in the city have it and will be getting to this soon. It also came with a recipe, if any of you are mafia and rollatini loving guys.
that recipe makes it seem WAY MORE complicated than it actually is.
basically three parts to that recipe, and stated more simply:
1. make a good sauce
2. thinly slice eggplant, and "cutlet" fry the slices - i.e. dip in egg and a blended breadcrumbs/grated cheese/parsley coating and fry. NOTE: you do not actually need to coat it like this, even though it is delicious. for something lighter and simpler you can just keep the eggplant plain.
3. make a tasty cheese filler - but this can literally be anything you like, it doesn't have to be some complicated ricotta mix. you can literally just slice some nice cheese. maybe add some prosciutto if like it.
4. cover it in sauce and cheese and bake
honestly you can just roll some prosciutto and parm inside plain eggplant, drizzle with oil, bake it and it's a great appy. so you only have to add the parts of that recipe there that you like.
but that parmagiana/lasagnia type recipe is obviously great too.
