I can’t for the life of me understand how this happens on Election Day. How do machines that supposedly worked the day before suddenly stop working

They have one purpose. Bought and used for the most part for one occasion every 2 to 4 years.

If my job was to sell a machine that's only meant to be used every 2 to 4 years and it reliably broke then I would be fired. Having that much time to test, re-test, and make sure they don't break and they still break is ridiculous. Incompetence.
