That looks like it could be the elite version (I dunno), but I would never bother with that and we still make batches that are off the hook. Just goes to show how easy and good that stuff is. And it shows just how much of petty loser one has to be to politicize a fucken bean purée. I mean, get a life already.
 
Removing the skin on the chickpeas makes a world of difference. It takes a bit of time though. (y)

I boil them in one of those tall pasta pots (with a built in colander) and those little holes provide enough friction when shaken to remove most of the skins

Yep. Before I learned about the baking powder trick a few years ago we were still pumping out pretty pretty good hummus. It just didn't have the texture I was looking for from the lebanese places I've been where the hummus was off the hook.
