OT: The M-Fing Food Thread

Old, overly roasted beans are the death of coffee culture in North America. I blame Starbucks

the irony is, I would argue that Starbucks revitalised coffee culture in Toronto. Before them, it was a few Italian joints and Jet Fuel.

After Starbucks proved there was a huge market for expensive coffee, a million local indie shops sprouted up

ensures consistency every time because overroasting strips away all the nuance, makes cheap beans taste the same as expensive ones, and makes their bitter brew taste the same whether you're at a Starbucks in Honk Kong or Toronto.

Besides, nobody gets coffee at Starbucks, they get coffee milkshakes. Starbucks is a dairy company as much as a coffee one.
Same thing as "blends" vs single source beans. So much cheaper and a cheat code to get away with lesser quality on beans that no one wants. But to your point, it also ensures consistency cuz single source beans will taste different with each crop. But the over-roasting mostly takes care of that alone.

And yeah I call Starbucks a candy company, but dairy works too. It's just gallons of sugar in their premade beverages to mask the ashy flavor of their coffee.
 
I agree that the right grinder is important but IMO the beans make a huge difference.

There are so many different flavour profiles especially with the light roasts — which is the only roast for me the past few yrs

Oh, both definitely play a role. But you can make mediocre coffee taste fine enough with the right grind and brew, and you can make single source brilliance tasty bitter and muddy with a shit grind, or even just being in a vacuum bag that was opened for the first time more tha 5-6 days before. Yes, there is no sweetness or complexity in wholesale bean, but until you know how to get the best out of a bag of kirkland, you're probably wasting your money on your single source Costa Rican light roast.
 
I'm probably gonna be accused of being overly geeky, but water temperature when brewing matters a fuckton too. So if using a French press or pour over, you should probably dial that temp in or you risk under or over extraction.
 
I agree. It's just that I usually hate people who take their coffee as seriously as me. Correlation does not always equal causation though, and there are always exceptions to the rule!

As far as rituals go, coffee is very low maintenance. My place has a built in water filter, I have a coffee maker, my only choice is what beans to buy for the next few weeks

If it makes you feel better, I got my RO system installed completely independently of my coffee addiction. So having good water for coffee was downstream of wanting good drinking water.

I'm not a very good coffee snob though. I buy wholesale grade beans most of the time, I run a barratza and have no interest in spending a grand or some shit to meaningfully improve on it, and more often than not I have a bit of brown sugar, honey or even cream in my first of the day.

I used to be very hardcore till I figured out that the extra convenience I get from not quite perfectly crafting a cup off coffee that's 10% better than what I get with my super automatic machine is entirely worth it.

But yeah, I hated myself for it. Go on r/coffee for 5 minutes, you'll see what I mean.

I have a SPINN machine. I press one button. That’s all the energy I have to give first thing in the morning
 
Some people do like the ritual of busting out the v60 first thing in the morning, temping the water to get that perfect extraction to your taste, grinding the beans, often by hand to perfectly tested coarseness and brewing the product. It's a process, I get it. It's like when crackheads say they get a rush through the entire experience from buying the product, to lighting up, to finally consuming it. Nowadays I get a rush from pressing the button to make my coffee. It's all in the ritual. We're all addicts in the end.

But where the r/coffee folks go wrong is when they make it their entire personality. Fuck off nerds

r/anything = obsessive snobs who never touch grass, which doubles as an act of self preservation because the prestos of the world would kick their ass
 
I have no issues with being obsessed, but you're not better than me because I sometimes get a coffee at Starbucks out of desperation. Stop looking at me like I'm the scum of the earth with your thick rimmed glasses.
