Set of all-clads if it's within your budget. Gold standard for stainless steel. A cheaper and good option is tramontina. Not quite as great of a performer but still really good value.

Sear in cast iron first if you can

Either way, don’t go above 275 and at least an hour a pound.

Tasted better than I could capture in a pic.

Got a decent amount of smokiness by wrapping the brisket in double smoked bacon, until the very end, when I broiled the top to create a crust.
