Tried ordering from the beer store. Guy shows up with just the low carb beer and none of the crafty stuff that I ordered. Never again.

Beer Store is a BS monopoly owned by the brewers...I haven't frequented one in over a decade....such a horrible shopping experience.

I want to browse the fucking aisles and look at the product, motherfuckers!!!
 
Yeah, I get most of my beer from the LCBO but their delivery is uber slow these days. It took 3 weeks to get some wine and then I had to go to the 'post office' (a.k.a., toxically perfumed SD).

If the OCS and breweries can deliver to my door within a couple days why cant the LCBO figure it out. Ive taken to doing the same day pick up for LCBO when ive wanted to order.
 
With reinstating their regular hours, I no longer worry about visiting a local LCBO. Go before 11 in the morning and it's empty (Dupont location).

Anyway, with HL's inspiration I decided to try Kenji's mushroom risotto recipe again. My second opinion is that while it is truly objectively insanely good, it's a bit intense. I would veer to CH1's hesitancy on the miso because all the miso did was create an umami mushroomy bomb that my taste buds are not always prepared for. The soy is more than good enough to give it the extra mushroomy goodness, but the richness that you get from the miso is nuts. It enhances the natural flavors that you are going for in a way that I'm not sure I'm always in the mood for. I like to have a big bowl of risotto and that just isn't possible with that kind of richness. It's like eating wagyu beef. Mindblowing but rich enough that you just need a lil nibble to be satisfied.
 
Interesting. I used a teaspoon of chili miso and it was perfect. Had a big ass bowl, delivered dinners to friends. Loved it.

Could be different technique. Not sure I remember it being this rich last time. Plus, I used the pressure cooker recipe which could sometimes intensify things. Not sure if you did too.
