Obviously any of the 3 would be great. I can only say that for myself, I've been on a kick of getting the most out of less popular cuts lately so id probably give that tri tip the brisket treatment in the smoker.
 
Want to replace the grates on my Weber… cast iron or stainless steel?
The ones I have now are SS but wondering if cast iron works better?

I mean, all things being equal I'd prolly go with cast iron. Just like I prefer a cast iron pan to a stainless steel one - cast iron you can get really nicely seasoned.

But cast iron is likely to be much heavier. Dunno about cost either.
 
I find stainless has more uniform heating, and the thicker the better for max heat
