Top 5 French Dishes.

Go.

Beef Bourguinon
Duck confit
Croque madame/monsieur
Cassoulet
Tartiflette

But the dishes themselves undersell french cuisine. The sauces are just crazy and deserve a chapter of their own in world culinary history.

Syrian food is pretty fucking good. (though you can argue that the entire Middle East uses the same cookbook). Check out Petit Alep next time you're in Montreal.

My version of italian owes almost as much to middle eastern as to northern italian.

Even then though... Greek food is blander. French food isn't, but is gross. I will grant you Indian.
Yeah Greek, German, any Eastern European.. It's blander for sure. But I was mostly comparing it to the Latin American, Indian, Thai's of the world.

So fucking good.

And we haven't really touched the pastry world.

Mmm hmmm that encompasses all of Greek cuisine. You're hanging out with the wrong Greeks.

No. I found it very tasty, but after a while you realize there are only just a few flavours. Jamon, oily fish and tomato.

I fricken love the whole tapas style but yeah the food is not all that much. But jamon and chorizo are excellent.

Thai is my go-to non bland cuisine. Every bite is an aggressive combo of sweet/sour/bitter/salty/umami

Agreed they should be confined to the history books alongside the Model T, the zeppelin, and electro-shock therapy.

I respect French cuisine but I don't love it. Too much cream/butter for me. The underlying flavor of every cuisine is based on the fat they primarily use for cooking. For me, I'll take olive oil any day over butter and 3 tons of heavy cream. But I can respect the technique required to create some of those dishes.
