OT: The M-Fing Food Thread

I always find it funny when people think that a "country" eats things. A very small percentage of the country may eat some weird shit but it's not all that different proportionally than most countries really. With that said I do hate the Chinese government and everything they stand for so while I'll defend the people of China I won't defend those mother fuckers.
 

Satisfying dish (though I have not made this specific recipe). Breadcrumbs subbing in for grated cheese is perfect for days when all your stocks go down and you’re too broke to buy Parmesan.

I don’t like raisins in my savoury dishes. Pine nuts, yes! Been adding those for years.
 
Raisins are unnecessary (comes from when the a-rabs ran sicily) but the rest is beauty.

Sicilian >> Northern, obviously.

As for 'chovies - they lose all their fishy flavor when you fry them up and dissolve them and you wouldn't even know that extra nutty flavor was fish at all.
 
speaking of umami, I have used 'nduja in dishes for days

one tablespoon has it all -- spicy, smoky, salty and best of all porky

in pasta (with some shrooms and a bit of tomato and cream)
in bean stew
in risotto
on bread, as a simple spread, sometimes with a little white anchovy

and I will use it again tomorrow
