Love that shit.

But I actually eat it plain. Haven't cooked with it.

I ate it plain for the longest time...still do of course

cooking with it came about by accident, I bought a big chunk from a restaurant (#supportlocalrestaurants or whatever) and then the gf ordered a big piece and suddenly we had more 'nduja than all the bread in the neighbourhood could sustain.

next thing you know, I discovered it's a fucking cheat code to making all your dishes happy.
 
....and to think you basically couldn't really buy it locally until 10 years ago

you'd think all of Italy's greatest culinary hits would have been mined by now...what else is there to discover??

Yeah of course. Pasta is a staple. My dad would kill me if he saw me use a recipe for that shit. Was just mentioning that Sasha is a rare chef that digs deep in Italian cuisine. Doesn't just do the same three pasta and pizza dishes like the majority of them.

Classic meat ragu lasagna, pungent caesar salad (with requisite anchovies) and a run of the mill Chianti.

Won’t stop traffic... a little cliche, but just what the doctor ordered.
