OT: The M-Fing Food Thread

Complete game changer for my stock imo. I roast off leak, white onion, and a bit of carrot. Bay leaf and peppercorn, good to go.

I'm gonna have to try it....When I use leeks, I usually sweat them in butter to build a base..and then add my chicken stock.

part of the reason, I keep my chicken stock on the pure side is that I use it for so many different dishes...but a little roasted leek flavour never hurt anyone
 
Made turkey noodle soup with Christmas turkey stock. It was awesome, huge flavour and depth. So good.
we had about a ~12 lb bird for thanksgiving. this was before I owned a stock pot. I made as much stock as I could using my biggest standard size pot. Because the pot was too small for the bird, the stock I ended up getting was crazy rich and gelatinous. We're talking solid at room temp levels of gelatinous.

And holy fuck, did it make one of the best turkey soups I have had.

Of course, now I have a stock pot, and made double the chicken stock which is weak as shit haha. The duck is nicely balanced. Doubt we have another turkey before easter or thanksgiving again though...

I simmered it for 48 hours and then had had enough. the duck more than made up for it (and filled my freezer)

foolishly I froze both homemade applesauce and chicken stock without labelling which is which. when frozen they require a taste test to differentiate....

labelled the duck at least. precious gold.

damn...how much water did you use

I switched to a pressure cooker (InstantPot) for my stocks....2HRs in that = 10 HRs on the stovetop

I make my stews in a pressure cooker. Always comes out awesome.

I'm old school and haven't used one of those instant pots that do pretty much everything. Are they really as good as some people say?

it's just another pressure cooker, so if you already have one, I'm not sure why you would need it
 
The "benefit" is that the Instant pot has all sorts of additional settings... But 10 times out of 10 I just use the pressure cooker setting. So yeah, just another pressure cooker.

Haven't they come out with some pot that acts as everything? Like a slow-cooker, pressure cooker etc? I thought that was an insta-pot? I learned to cook with nothing more than pots and pans so I don't use the new stuff. Heck I saw an oven on TV that you order their food kits, mix it together and place it in this oven and hit a code corresponding to the food. I was like wtf? How lazy are people anyway? Cooking is a stress relief, to me anyway.

true...I forgot that I could use the InstantPot as a slow cooker because I never do

also the settings are mostly bogus...there's a different one for porridge/soup/rice/the person you just murdered. but I always set it to the time I think my dish needs

I appreciate my slow cooker a lot. Nice to be able to just pile ingredients in and let it do its thing overnight.
 
I love my boy Kenji, but I disagree with him saying there is no use for slow cookers. It is extremely extremely convenient, even if the final product will not be as strong as it will be with a pressure cooker. I don't use slow cookers at all, but I completely see the appeal purely for convenience. And realistically, the food ain't half bad in them either.
