Wings: I might tweak my method as an experiment based on Kenji’s method.
Anyway, I use an air fryer to cook the wings, it essentially super charges the air drying he does overnight in fridge as part of cooking process. Crispy, every time. 30 to 35 mins. Zero oil added.
Dressing, Frank’s the the classic, but recently I’ve been using a fairly “robust”
gochujang, honey and soya mix.
Easy as as hell, and great results.
