OT: What are you Watching/Listening/Drinking?

Wings: I might tweak my method as an experiment based on Kenji’s method.

Anyway, I use an air fryer to cook the wings, it essentially super charges the air drying he does overnight in fridge as part of cooking process. Crispy, every time. 30 to 35 mins. Zero oil added.

Dressing, Frank’s the the classic, but recently I’ve been using a fairly “robust” 🥵 gochujang, honey and soya mix.

Easy as as hell, and great results.
 
Hint: Cast iron isn't a brand. It doesn't matter how much you pay for cast iron. They all have terrible thermal conductivity.

The same guy who wrote what worm posted is literally one of the ring leaders in the "don't spend a lot on cast iron skillets" brigade.

I would love to be a minimalist... but I'm addicted to gadgets and stuff.

I dream of getting rid of it all and just having stuff I actually use. Maybe someday.

I’ve been having the very hot level Red (or Green) Hot Thai chilli peppers from the supermarket recently. The last two were from Dominican Rep and Mexico. Probably the best chilli peppers I’ve had.
 
I recommend making your own hot sauce.

I made this crazy Ghost Pepper sauce months ago and I'm finally down to my last bottle. You can pack so much flavour in your own. Just roast a bunch of your favorite veggies, blend it up, add some honey and vinegar and it's fantastic.

I’m gonna experiment with Quick Pickles during this lockdown. We’ll be getting weekly veg delivered every week, so there’ll always be something to work with - I’ll add some peppers occasionally for some heat.

Seems like the ideal accompaniment for grilling season.

It was my first time. Only did it because I ran into some ghost peppers at a farmer's market and they were way too fucking hot to do anything else with.

But it was hilariously eeasy. A ghost peppers garlic onions tomatoes eggplant on a roasting pan. Then into the blender. Then add some sweet to taste and some acid to preserve. It is so fucking good.

And it's hilarious how hot it is given the ghost/veggie ratio. Ghost peppers are no joke.

Oh yeah also toasted the leftovers till dry and ground it up so I have some crushed ghost pepper to sprinkle instead of chili. Still insanely hot tho.
 
I like hot stauce - I just finished off a bottle of West Indian ghost pepper sauce my boss gave me. Really good flavour, but a big pass using as wing sauce. Franks / Louisiana sauce + butter is my choice. Maybe a little something smokey to add a little something something but Ghost Pepper is just too hot to enjoy on a wing imo.

Must shit literal fire for days after having that stuff. Sounds like it would be worth it though.
