OT: What are you Watching/Listening/Drinking?

My local Metro was well stocked, didn't have any issues there with meat. Few things were low and my yellow pepper was discovered to have gone bad when I sliced it open, but other than that business as usual.
 

Read this very carefully. Try it again with the wok. Come back and report your findings.


Note: A cast iron skillet is NOT ideal for any fried rice dish especially if you have a FUCKING wok.

If you're a good boy I will share my step mother's fried rice recipe with you. Not to brag, but she's Chinese and it's the best fried rice you'll ever have.

I'm starting right from the top... including the proper way to make rice. Really... this is probably the biggest factor in making a great fried rice.

-2.5 cups of rice (preferably AAA scented jasmine rice- Rooster brand)

-Rinse rice in a bowl until the water is clear (removing starch so it won't be sticky)

- Place rice in pot with water over the rice about an inch. Boil rice until water is gone.

- Turn to low and allow it to steam with the lid on for about 10 minutes... until small holes start to appear.

- Chop 2 stalks of celery, half a medium white onion, 2 stalks of green onions

- 1/4 bag of frozen peas... rinse in warm water to thaw

- Let rice cool before frying

- Using Canola oil in a large pan or wok fry up half of the onion/celery mix

- add half of the rice fry for 3-5 minutes

- add a teaspoon of soy sauce and the rest of the onion/celery mix

- add the rest of the rice and fry for another 5 minutes or so

- add the peas

You can add in some egg right near the end if you like as well.

Niiiice there's at least 4 steps of rice prep there that I've been missing.
 
always rinse the rice....it's in every instruction booklet they hand out with rice cookers.
 
Ima gonna try that recipe, but not sure about the celery. All it those is add another form of water to the mix. But I'll keep an open mind and give it a whirl.
 
Yeah. I've wondered about the Canola oil... I'll actually ask her later if she feels it has to be Canola or if she just happens to use it.

a lot of oils have no taste (canola, peanut, safflower)....so easy to sub for canola
