Cacio e Pepe is basically poutine in Italy (eat it at 2am when drunk). I'm just adding building on it with more unami (anchovy) and some veg.

This guy is a bit overprecious in technique but this is legit cacio e pepe:
There is no butter in real cacio e pepe. That's a cheat. (obviously a tasty cheat).
but cacio e pepe only needs Pecorino, (toasted) cracked peppercorns, and pasta water.

Not a big fan of hot dogs but I'd eat the **** out of that. I made a simple olive oil, garlic pasta sauce with some homemade sausage that I removed the casing off of for dinner tonight.
Tldr: make your own sausages. I make a fuckton every year and freeze them. Lasts me 6-8 months. They're seasoned all differently so you get a nice variety too.
When I went to Walmart today there was a sign in the meat section that explained that due to supply issues they've had to source some meats from the US.
Wonder how much of an issue this will be. Anyone else noticed shortages in stores yet?
