OT: Movies/TV Shows

My dad tells me about the women getting together and cooking pasta ceci for all the school kids cuz the school food was so bad.

Every single time. Same story.

He’s Zekeing you. Probably a closeted Habs fan too

Yeah, I don't fuck with blue either. Most of the strong/soft french cheeses are outside of my palate. Parm & that whole family (romano, etc) is brilliant, I have all sorts of time for the Swiss cheese family (emmantaler, gruyere), any aged cheddar, fresh mozz (di buffalo, fior di late, etc) , mexican fresh cheeses (queso fresco, queso oaxaca, etc), sheep or goat feta, gouda, manchego....all good stuff.
Yeah, that's about where I stand. A 4-5 year aged cheddar is about as good as it gets. Nothing blue for me.

pigs are funky
That’s why half the world doesn’t eat it

Hey I like it.

But you can make a great carbonara with plain old bacon!

Realizing that the dish was born out of American bacon and eggs rations really frees you up to try stuff.

Correct. I rarely ever make it the same way twice in a row. Different experience every time and I really don't have any strong preferences.

yes… in fact I would pick bacon over pancetta personally

Though the name means "eggplant in the style of Parma," a Northern Italian city, the dish originates in Southern Italy where eggplants, tomatoes, and olive oil are plentiful. In fact, real classic eggplant parm is made solely with mozzarella cheese—it doesn't necessarily have Parmesan at all
This has to be correct. I don't taste a trace of parm in this dish whenever I get it.
