OT: The M-Fing Food Thread

My controversial take on Parmesan.

I love it (the real stuff, not all the knockoffs), but it seems so wasteful as a grated enhancer to spaghetti with sugo. Most of the nuance gets lost in the tomato. I prefer to eat it thinly sliced with some nice bread, or shaved generously on a dish where it's the star.

I prefer the sharper, saltier Pecorino for grating purposes.

romano, grand padano, all good.

i think LoF doesn't like this:

It's become near impossible for me to eat anything without considering LOF's hot take on it. Case in point, right now I'm having some creamy 8% fat Greek Yogurt...with a spoonful of maple syrup. Damn it's good....but what does LOF say?

I think you know better than to do that. I'm not buying it.

I'm beginning to think he just doesn't like strong (or any?) flavours.

Cheddar, nope. Blue, nope. Lamb, nope.

Tenderloin, the most flavourless cut, yup.

feta and swiss stronger than (most) cheddar

very much depends on if you're getting the Kraft version vs something authentic.

but fair enough.

back to just being a complete enigma. with an aversion to strong flavours

I think there must be some connection between my dislikes and smell, but it definitely carries over into taste too.

But blue cheese stinks. Cheddar is smelly. Parmesan has a gross odor. If someone is eating nachos and cheese beside me at a game, I actually get offended, like it's an invasion of my personal space to send sniffs of that shit in my general vicinity.

I don't go for any of that Kraft prepackaged junk.

I get cheese fresh off the block at Whole Foods.

I never doubted it...I just don't know why some folks insist on explaining your tastes with logic, using some hastily concocted XgFood metric.

I say, EMBRACE THE RANDOMNESS. OUR SOULS ARE NOT SPREADSHEETS

At one time several years ago, I was making a lot of homemade pizza for myself (before bread was struck down as unconstitutional on my personal menu). And I was just lazy and bought prepackaged grated mozzarella for that. I think the brand was maybe Sargento? Or maybe another one, can't remember. Anyway, when it's melted and mixed into the tomato sauce, it tastes fine enough. But I also used to eat the grated cheese as a snack. Fast forward several years and I wanted to make some pizza again so I bought some cheese from Whole Foods while I was there, and life went on. Later, I had occasion to try the Sargento one again and munched on some as a snack, and it was actually disgusting. Literally not something I could swallow. So the days of prepackaged cheese for me ended then.
