For the best chicken soup try your best to find authentic Gallina (old hens) from your butcher. Way way more flavor.

eh, try to use bones from all the meat we consume. Chicken bones pile up quite quickly.

Yeah, I try to only buy whole chickens and break them down myself. You end up with freezer bags full of bones very quickly.

As I don't have an upright freezer, I figure I pay a little extra to my butcher to store them extra bones

I also enjoy roasting or grilling chicken thighs....
